Theme and transparency are in appearance settings. On Android, you can also choose what the VPN notification shows.
Open Settings, Appearance to choose the blue or dark theme, simple mode and transparency.
On Android, Notification, What to show lets you choose the server name, speed, session traffic and latency.
Documents are in settings on your phone and in About on desktop.
